Banana Jam

Big hit at book club

2 c sugar
1/2 c strained lemon juice
zest of 2 lemons
6 medium ripe bananas, peeled and sliced into 1/4" pieces

Combine sugar, lemon juice, and zest in a bowl. Stir until sugar is coated. Add bananas and let stand for 2 hours in room temp. Transfer mixture into a pan and bring to a boil, then reduce heat and simmer uncovered for 30 min or until jam is thick. Stir frequently. Let cool and enjoy. May be placed into sterilized jars.
