This is really great when you are serving a spicy main dish. It is refreshing and light and tastes really good.
2 c water
2 c chicken stock
2 c white rice
1 c chopped cilantro
1/2 c chopped Italian parsley
4 tbsp minced garlic
1/4 c fresh lime juice
2 tbsp extra virgin olive oil
2 tsp fresh black pepper
salt to taste
Make your rice as you regularly would in rice cooker or in pan. Once cooked place in a bowl and separate with a fork. Add all the ingredients and mix to incorporate. Serve warm or at room temp.
