Chicken w/ Goat cheese and Basil

6 boneless chicken breasts with the skin on
8 to 10 oz garlic and herb goat cheese
Fresh basil leaves
Olive oil
Kosher salt
Fresh ground pepper

Preheat oven to 375

Place the breasts on a sheet pan. Loosen the skin from the meat with your fingers, leaving one side attached. Cut the cheese into 1/2" thick slices and place 1 or 2 slices + a large basil leaf under the skin of each breast. Pull the skin over as much of the meat as possible so chicken won't dry out. With fingers rub each piece with olive oil, sprinkle them with salt and pepper.

Bake the chicken 35 to 40 min, until the skin is lightly browned and the chicken is just cooked through.
