Shrimp Sticks

Enough for 4 large skewers

12 oz fresh shrimp, peeled and deveined
cooking spray
Fresh pineapple sliced 1/2" thick
1/2 tsp lemon-pepper seasoning
3 Tbs poppy seed salad dressing
1 Tbs orange juice or pineapple juice
Fresh Pineapply wedges

Thaw shrimp and rinse; pat dry with paper towels. Lightly spray grill pan.
Alternately thread pineapple and shrimp; sprinkle with lemon pepper.

For brushing sauce, stir together the dressing and the juice.
Cook each side 3 to 4 min
Brush generously with sauce
Cook until shrimp is opaque and pineapple is cooked through

Poke sticks into fresh pineapple wedges.
