2 sticks unsalted butter softened
1 c firmly packed brown sugar
1/2 c sugar
2 eggs (beaten)
1 tsp vanilla
1 tsp baking soda
1 tsp cinnamon
1 1/2 c all purpose flour
3 c Old Fashioned oatmeal
2 c diced walnuts (Optional)
2 c chocolate chips (optional)
1 c sweetened flaked coconut
Preheat oven to 350
Beat together butter, sugars, eggs, vanilla, baking soda, and cinnamon. Stir in flour followed by the oats. Add the walnuts, coconut, and chips and mix well. Drop large Tbs sized rounds onto ungreased cookie sheet.
Bake 10 to 12 min
Makes about 3 dozen.
