1 1/2 lb salmon fillets
Kosher salt
3 tomatoes diced
1 small onion diced
3/4 Tbs lime juice
1/8 tsp Tobasco sauce
1 tsp sugar
1 tsp pepper
Step 1
Lay salmon on bed of salt in bowl and cover with more salt. Cover with plastic wrap and fridge overnight. Rinse off salt next day and dice salmon.
Step 2
Mix tomatoes, onions, and salmon together. Add all other ingredients. Chill until ready to serve.
